Product Application of Sodium Hexametaphosphate CAS# 10124-56-8
Sodium hexametaphosphate finds extensive application in meat commodities including sausages, ham and fish sausages. It improves water retention capacity, strengthens binding properties and inhibits fat oxidation in these products. For fermented foods such as soybean paste and soy sauce, it suppresses discoloration, elevates viscosity, shortens fermentation cycles and optimizes the final flavour profile.
When applied to beverages like fruit juices and soft drinks, it boosts juice extraction rate, raises viscosity and hinders the degradation of vitamin C. In ice cream manufacturing, it promotes overrun, increases product volume, improves emulsification, avoids structural breakdown, and delivers better texture and colour. It is also added to dairy products and beverages to stop precipitation caused by protein coagulation.
Within beer brewing, it facilitates clarification and averts turbidity formation. For processed beans, canned fruits and canned vegetables, it stabilizes natural pigments to maintain the original food colour. Furthermore, spraying aqueous sodium hexametaphosphate solution onto cured meat can strengthen its antimicrobial effect.
